American cuisine is constantly evolving, a reflection of the melting pot of the cultures brought here from around the world. piebird takes liberties with flavor profiles and compositions, unburdened by the expectation to stick to traditions that legacy institutions experience.
Our Story
A home away from home, piebird is where hotel guests and locals come together under shared American traditions. piebird takes its name from the ceramic figurines used to vent steam from covered pies as they bake, helping form a flaky crust and evenly cooked filling. In the 1930s, manufacturers in the United States began to experiment with making these tools into playful characters, interjecting a touch of whimsy to everyday life just for the sake of seeing someone smile. Through this playful experimentation the piebird was born, credited first to the Pearl China Company in Ohio, and likely inspired by the nursery rhyme lyric “four and twenty blackbirds baked in a pie.” With an open mouth to vent steam that bursts through the center of a piecrust and shiny colorful exterior, piebirds are as charming as they are functional. piebirds are a reminder to enjoy the little things in life and always save room for dessert.
